STRAWBERRY AND VANILLA YOGURT


400g strawberries with a squeeze of lemon juice
2 dessert spoons of honey
2 150g cartons of rich thick Vanilla Yogurt
200ml full cream milk
250mls single cream
150g caster sugar
Combine strawberries, lemon juice, honey, sugar and blend into a fruit puree. Add the milk, cream and yogurt and blend until well combined. Allow the mixture to chill in the freezer for 45 mins or until the mixture has cooled down to 8°C. Stir and pour immediately into the Soft Server machine and churn the mixture for approx. 20-30 mins.

RASPBERRY SOFT SERVE ICE-CREAM (Rival ice cream recipes)


320g frozen raspberries
Squeeze of lemon juice
280ml full cream milk
260mls whipping cream
160g caster sugar
In a blender or food processor combine the raspberries, lemon juice and milk. When completely blended, add the sugar and blend again on high speed until the mixture is completely smooth and all the sugar has dissolved. Add the double cream and blend until combined. Put the mixture through a fine sieve to remove the seeds and place in the freezer for 45 mins or until it hascooled down to 8°C. Stir and pour immediately into the Soft Server machine and churn the mixture for approx. 20-30 mins.

VANILLA SOFT SERVE ICE CREAM


360mls full cream milk
160g caster sugar
2 egg yolks
360mls single cream
2 teaspoons of vanilla extract
Place the milk, cream and 140g sugar in a saucepan and cook over amedium heat until the sugar is completely dissolved. Whisk the egg yolk with the remaining 20g sugar until they appear almost white. Remove 100mlsof the hot milk/cream mixture from the pan and slowly whisk into the beaten egg yolks. Gradually whisk the yolk mixture back into the saucepan and cook over a medium heat until the mixture thickens slightly and thinly coats the back of a wooden spoon (about 8-10 mins). Do not allow mixture to boil. Cool themixture quickly (e.g.: in an ice bath) and place in the freezer for 1 hour or until the mixture has cooled down to 8°C. Stir and pour immediately into the Soft Server machine and churn the mixture for approx. 20-30 mins

STRAWBERRY CRÈME FRAÎCHE SOFT SERVE ICE-CREAM


360g fresh strawberries
Squeeze of lemon juice
270mls full cream milk
270mls crème fraîche
150g caster sugar
Combine the strawberries, lemon juice and sugar in a food processor or blender until the sugar has dissolved. Add the milk and crème fraîche and blend until combined. Chill in the freezer for 45 mins or until the mixture has cooled down to 8°C. Stir and pour immediately into the Soft Server machine and churn the mixture for approx. 20-30 mins.

LEMON SOFT SERVE ICE-CREAM (Rival ice cream recipes)


Zest of 4 Lemons
6 tablespoons of Lemon Juice
200g caster sugar
300mls whipping cream
300mls full cream milk
Wash the lemons and with a zesting tool remove the zest from all four lemons. Place the zest, sugar and lemon juice in a food processor or a blender. Blend for 3 mins or until the sugar has dissolved. Stir the mixture slowly into a jug containing the cream and milk. Sieve and chill in the freezer for 45 mins or until the mixture has cooled down to 8°C. Stir and pour immediately into the Soft Server machine and churn the mixture for approx. 20-30 mins.

MARMALADE SOFT SERVE ICE CREAM (Rival ice cream recipes)


300g of good quality marmalade (orange tangerine)
300mls whipping cream
300mls full cream milk
50g caster sugar
2 tablespoons of orange juice
In a blender of food processor combine the marmalade, sugar and milk. When the sugar has dissolved add the cream and blend briefly. Add the orange juice. Put the mixture through a fine sieve and place it in the freezer for 45 mins or until it has cooled to 8°C. Stir and pour immediately into the Soft Server machine and churn the mixture for approx. 20-30 mins.

BANOFFEE


225mls semi-skimmed milk
360mls double cream
145g caster sugar
140g banoffee toffee (e.g.: jar made by Merchant Gourmet)
2 egg yolks
2 medium bananas together with a squeeze of lemon juice
Whisk the egg yolk with 10g of the sugar until almost white. Boil the milk and remaining sugar. Remove 100ml and slowly whisk into the beaten egg yolk. Gradually whisk the yolk mixture back into the saucepan. Cook the mixture over a medium heat, stirring constantly, until the mixture thickens slightly and coats the back of a spoon (about 8-10 minutes). Cool quickly (e.g.: in an ice bath). In a blender or food processor combine the bananas, lemon juice and banoffee until smooth. Add the double creamand cooled custard and blend just until combined. Allow the mixture to chill in the freezer for 45 mins or until the mixture has cooled down to 8°C. Stir and pour immediately into the Soft Server machine and churn the mixture for approx. 20-30 mins.

COFFEE SOFT SERVE ICE CREAM


250mls full cream milk
200mls whipping cream
175mls single ream
4 egg yolks
170g caster sugar
4 level teaspoons of instant espresso coffee powder
Place the milk, coffee powder, cream and 140g sugar in a saucepan. Cook over a medium heat stirring constantly until the sugar has completely dissolved. Whisk the egg yolks and the remaining 30g sugar until pale yellow and mixture forms a ribbon. Remove 100mls of the hot milk/cream mixturefrom the pan and slowly whisk into the beaten egg yolks. Gradually whisk the yolk mixture back into the saucepan and cook over a medium heat until the mixture thickens slightly and thinly coats the back of a wooden spoon (about 8-10 mins.) Do not allow the mixture to boil. Cool the mixture quickly (e.g.: inan ice bath) and place in the freezer for 45 mins or until the mixture has cooled down to 8°C. Stir and pour immediately into the Soft Server machine and churn the mixture for approx. 20-30 mins.
