Recipes for Homemade Ice Cream
Vanilla Ice Cream Recipe
8 medium-large eggs, whipped until light
3 large cans condensed milk, cold to icy
4 cups sugar
2 Tablespoons vanilla
1-1/2 teaspoons salt
Combine eggs, condensed milk, sugar, vanilla, and salt; mixture will be light and fluffy. Pour into a 6-quart ice cream freezer and fill with 2% milk. Turn in a hand freezer with a large amount of freezer salt until hard frozen.
Chocolate Ice Cream Recipe
1 cup heavy cream
1 cup light cream* (half and half)
1/2 cup sugar
3/4 teaspoon vanilla extract
1 pinch salt
1/4 cup chocolate syrup or 3 tablespoons cocoa
1/8 teaspoon cinnamon (optional)
Preparation:Combine ingredients. Stir until sugar dissolves. Freeze according to ice cream freezer's directions.
1/2 cup cream and 1/2 cup milk may be substituted for light cream.
Apricot Ice Cream Recipe
One 12-ounce can skimmed evaporated Milk
1 envelope plain gelatin
3/4 cup sugar
1-1/2 cups (about 3/4 pound) ripe fresh California Apricots, diced
One 12-ounce can Apricot Nectar
2 cups plain low-fat Yogurt
1 teaspoon vanilla or 1/2 teaspoon grated orange peel
7 pounds small ice cubes
1 cup rock salt or table salt, according to ice cream maker
Combine milk and gelatin in large saucepan. Heat, stirring often, until gelatin dissolves. Add sugar and heat until it dissolves. Using a wire whip, stir in apricots, apricot nectar, yogurt and vanilla. Pour mixture into canister of ice cream maker and assemble the machine. Make alternate layers of ice cubes and salt around the canister. Churn 20 to 30 minutes or until softly frozen. Pack into containers and freeze. For best flavor, let ice cream soften slightly before serving. This is my favorite recipe for homemade ice cream !
Green Tea Ice Cream Recipe
* 3 tbs green tea leaves (whole)
* 1 cup heavy cream
* 2 cups cold milk
* 2 egg yolks
* 1 tbs cornstarch
* 1 cup sugar
Preparation:In a saucepan, heat milk slowly to boiling. Then add green tea leaves and cover. Let steep (simmer) for about 15 minutes. Meanwhile, in a mixing bowl, beat egg yolks with sugar and cornstarch. Remove milk from heat and strain out the tea leaves. Whisk in egg mixture, whisking constantly to keep the eggs from cooking in the hot milk. When mixture is starting to thicken, transfer to a larger bowl and allow to cool. Then stir in the heavy cream. Freeze mixture for at least 2 hours before serving.
Honey Ice Cream Recipe
* 1-1/2 cups half-and-half
* 1-1/2 cups heavy (whipping) cream
* 6 egg yolks
* 1/2 cup plus 2 Tablespoons honey
* 1 Tablespoon unsalted butter, cut into small pieces
* 1 Tablespoon sugar
Preparation:In saucepan over medium heat, combine half-and-half and heavy cream, and heat until almost boiling. While cream heats, in a large bowl, whisk egg yolks and honey until smooth. Gradually whisk in half of the hot cream, then return mixture to saucepan and cook over medium heat, stirring constantly, until the mixture visibly thickens and forms a custard, about 3 minutes. Do not let it boil, or it will curdle. Remove from heat, let cool, and then refrigerate to chill thoroughly.
Freeze custard in an ice cream machine according to the manufacturer's directions. Store in freezer until needed.
