Grilled lobster tails add an interesting twist and flavor to the delicious taste of lobster.
Lobster is a summertime staple and it's a big part of summer on Martha's Vineyard. If you are renting a vacation house for a week and have either a gas or charcoal grill, we hope you'll enjoy these recipes for grilling lobster tails.

Fire-up the grill to medium-high.
Cut each lobster tail lengthwise through the shell into 2 pieces. Cover with plastic wrap and refrigerate
Mix the tomatoes, 8 tablespoons of the olive oil, lemon zest, tarragon, lemon juice, chives, salt and pepper in a large mixing bowl
Brush the lobster tails with olive oil and season lightly with salt and pepper.
Place the tails, cut side down, on the grill and cook for 3 minutes. Flip the tails and cook until lobster is just cooked through, 1 to 3 minutes longer. Spoon some of the vinaigrette over the cut tail meat so that it drizzles down into the lobster shells.

In a large mixing bowl, combine the garlic, paprika, olive oil, butter, lemon and pepper
Brush the marinade on the lobster tails
Grill the tails, meat side down, on the grill until the meat is opaque and firm.
